Stocked Up

So. It's been established that I live alone and like to cook for myself. This in essence isn't a bad thing. It's actually instrumental in my weight loss and my being able to afford to pay rent that exceeds most people's mortgages.

Still - I do have a few issues. (Well. A truckload - but we're talking kitchen-wise right now.)

Issue #1 - My father, God love him, honed his culinary talents in a firehouse in Brooklyn cooking for 40 men. He knows not the meaning of less is more. Case in point - I was having people over for New Year's Eve. By people I mean 6, 7 if you include me. I wanted to serve Pigs in a Blanket. I asked him to pick some up for me.

This is what is now taking up 1/4 of my freezer.



He got me a pack of eighty. 8-0.

So I have a bit of a space problem. Since before I even start my freezer looks like this:



And I have all of this:




So put back together - with a box of frozen brown rice hanging in mid air it looks like this.



I straightened out the fridge too.








Above the fridge and in the cabinets...




I have enough food. Really. I do. For a WHILE.

Except one thing. I made breakfast and wanted a little ricotta on my eggs but it's...not good so I threw it out. TJ's had fresh ricotta and I almost bought it yesterday. Sigh. I'll reign myself in though.

Anyway - I had the last of the eggs I made the other day over spinach and some onion-y potatoes on the side.







Plan for today - pack up (dirty laundry hee!) and head out to LI after a quick trip to the gym. Hanging out with Jen today and doing a little shopping tomorrow, working from home on Monday.

  3. Hi Janna, moretolife and Jenna!! Thank you so much for stopping by. The egg this is so super simple. I've made a ton of variations of this casserole/fritta type thingy. I think I have it listed under recipes. You should try it!
