Sing. Sing a song...

Good evening.

Just home from rehearsal. UGH. I really did not miss these late nights. But we're singing Leonard Bernstein's Chichester Psalms at Carnegie this year. Should be interesting and if I'm to believe our choral director - a bit challenging.

I ate lunch at almost 4 PM. I took the leftover piece of chicken parm from dinner last Friday and put it on a bed of spinach with some sweet yellow and orange peppers.



Then I had a little wrappy type thing at about 8 PM. It's Dubliner cheddar with hummus on a whole wheat wrap.

In the corner is a brownie bite that I baked and brought to rehearsal. They were gone in a flash.



My sweet tooth was still looking for something once I got home. I busted out the pretzel thins.






Why do I look like I have man hands???

Here's a question re: The Biggest Loser. Am I to believe that these people who were sent home do not have scales? Why do they look so surprised to find out how much weight they've lost?? They have to know what they've accomplished in the time between the ranch and the finale. Right??? My sister was making this point about the finale. I'm pretty confident that's not even a real scale they step on - and they weigh in officially offstage.

Just wondering. I'm pretty sure though that the weigh in is all for...well...show.

Also just wondering if anyone else wants to punch Melissa square in the face. I'm not a violent person but man oh man she BUGS.

What else do I need to report. OH. I'm working from home tomorrow. I might make some bread. And I HAVE TO CLEAN.

I also have to get back to the gym. I'm not feeling the treadmill. I walked about 2 miles to the subway before rehearsal tonight so at least that's something.

It's not like I haven't been exercising at all. I'm just being less diligent about it. This is what happens. I hit 60 lbs and now I feel like I'm slacking. I should be kinder to myself. I've got a lot going on but I also don't want to get out of the habit. That would not be good at all.

Time for me to log off I think. I'm starting to yawn and this post is starting to go all over the place. :)

Peanut Butter and Pretzels

UGH. Looooong day today. I have 2 more meals packed to tide me over through rehearsal tonight. I'm so out of practice for this. I don't get home until 10 tonight.

Pray that I can stay awake please!!

Easy Cheesy Mashed Potatoes

I go days without eating cheese and then suddenly I can't get enough.

Today was one of those days.

Dinner was a boneless pork chop with a a little Sweet Baby Ray's Honey BBQ Sauce.

Some TJ's frozen asparagus - roasted in the oven.

And Easy Cheesy Mashed Potatoes.



Here's how I did it.

Note: I used a lot more potatoes than for 1 person.

Ingredients:

5 red potatoes (I'd say about 1 lb)
1/2 cup shredded extra sharp cheddar - this was Kerrygold Dubliner. I am totally IN LOVE people. Exceptional cheese right there.
1/2 cup warm skim milk
1.5 tbsp butter
S&P to taste





Wash and cut potatoes into like size chunks. Place in pot - cover with cold water. Bring to a boil and let simmer for 10 min or so - or until potatoes are fork tender.

Drain & then place potatoes back in pot to dry off some of the excess water.

Add about 1/4 of the milk (warmed for 1 min 30 secs in the microwave) and begin to smash potatoes. Add half the butter as well. If you have a masher you can do this all by hand. All I have is a meat tenderizer.

It doesn't do such a good job.

So...I wound up whipping the potatoes with a hand mixer.



Add half the cheese, blend. Repeat process until you use all the milk, butter and all the cheese.

S&P to taste.

Enjoy.


Here's the thing about these potatoes. They are made with skim milk and even though I ate a good portion of them I have plenty left over. It's not something I'd eat every day but I don't see anything wrong in induldging time and again.

I saved the other half cup of milk and had it for dessert with a little Midnight Moo.




Daily dairy requirement - fully accomplished. ;)

Just make yourself a dang quesa-dilluh!

I am running out of bread - I'm full of whole wheat tortillas.

There was only one thing to do today.

It's about an ounce of cheddar and pepperjack with 2 tablespoons of Pace Picante (Medium) in between two TJ's WW tortillas.

Warmed up in a skillet with canola spray and a dollup of sour cream.



In in the middle of making dinner. Be back with a full report in a bit.

Dinner for Seven

There was a full house last night for dinner. Having two kids in attendance - kid friendly foods were on the menu.

Mac and cheese...



Baked breaded chicken...



Roasted broccoli...



My plate...



There was also wine...



I know. This is not kid friendly. :)

And a little bit of ice cream for dessert.



I also made some brownies for my return to chorus tomorrow. It was a nice break. It's always so cold down in Tribeca though. The walk from City Hall to the school is BRUTAL. But now they're done and I don't need to worry about them anymore. The ends got a little too well done but the rest tasted pretty good.



I may have sampled a bit. :)

This brings us to breakfast this morning.



Surprise!!

I'm headed back into the city in a few. I've been asked to take some cheddar cheese and red potatoes home so I expect to incorporate them for dinner in some way.

I'm thinking mashed cheddar cheese potatoes might be in order.

We shall see.
