Chicken Salad

I'm still on my sandwich kick apparently but I know today it's partially because when I work from home - the last thing I want is to eat a salad.

When I'm at work I'm stuck with whatever I've brought from home. When I'm home I have my kitchen at my disposal.

So today I cubed a half of a chicken breast - about 3 oz - tossed it in a teaspoon of Ken's Light Vidalia Onion dressing, threw in some oven roasted tomatoes and put it on a sandwich thin w/spinach.

Here's the result:

Trader Joe's delicious BBQ Pop Chips on the side.
