Eggs and Cheese

I know. Me and eggs weren't getting along for a while. But I'm trying again.

I had almost a dozen eggs sitting in my fridge and I needed to start to use them. I decided to make a huge egg casserole.

Spinach, goat cheese, and bacon.

With potatoes on the side.

Expect to see this over a bed of spinach this week, maybe with a spoonful of ricotta. Yum.

Tomorrow I'll tell you about my article for class, what I ate for dinner and other such exciting things.
