Chicken Enchiladas

Good morning (or almost afternoon)!!

Better late than never with my dinner.

I improvised a lot because I was hungry and lazy and didn't want to log on to the computer to get the recipe.

I used the following:

1 tbsp olive oil
1 chicken breast - shredded (you will see 2 - I saved one for salads)
1 can diced tomatoes w/chilis
chopped onion, bell pepper and cilantro - it all fit in about a 1/4 cup
two dashes of cayenne, 3 of chili powder and cumin
1/4 cup of frozen corn
S&P
1/2 cup mix of shredded cheddar and pepperjack


Sautee chicken in olive oil till cooked through and set aside.




Chopped the veggies/herbs



Add the tomatoes, spices and corn and simmer for about 20 minutes.








Shred the cheese and chicken






I filled 2 whole wheat tortillas with the chicken, a bit of cheese and a bit of the sauce, and topped with the rest.



I might have had a glass of wine...



The finished product.



With a little sour cream on top. I ate one of the filled tortillas - still have one leftover.



And it was good. :)

This morning I made some eggs. 1 whole + 2 whites, swiss and onion with some parsley.



And a multi-grain EM on the side.



Not sure about lunch today - probably a tuna sandwich (exciting!!) and I don't know if I'm gonna bust out the camera on a first date. We'll see how it goes!!

  2. Your breakfast eggs look delicious as do the enchiladas. I've been on an egg mixed with egg white kick lately...they keep me full a long time.

  3. Thanks Patty! It was yummy!! I was so full yesterday - it was great. And eggs are also so good for sneaking in some extra veggies.

    The date wasn't the worst - but was far from the best. I'm still looking!!
