How to eat fast food

First you walk 2.6 miles to Zumba.



Then you get your ass kicked for an hour. Then you walk 2.6 miles home.

Then you order the smallest thing you can - and add some spinach to make yourself feel better.



And pair it with the biggest drink.



Then you eat some bunny feet for dessert.





The end.

Have some cheese with that W(h)ine

My job in general is full of stressful situations. The work of meeting planning is more organization than anything else but it's definitely heavily customer service based. This means I'm the one people freak out on if the hotel makes a mistake entering a reservation or they get out early and expect a car ordered for a half hour later to miraculously appear just because they are ready NOW.

So yesterday...I was just saying to my friend Annie at 4:15 or so..."Do you think it's safe for me to run to the store now?" I found out it wasn't.

Famous last words.

In the span of the next 15 min I was trying to find 2 people in San Francisco and a van for a group of people in Chicago resulting in me putting my cute little niece on hold when she was just calling to thank me for her Halloween gift.

Maddie I'm sorry. I'm glad you liked your socks.

This was one of those weeks. I feel like I did the best I could under the circumstances but still wind up feeling like I didn't do it quite as well as I could. The upside of that though is that it was great week for me virtual meetings-wise. I did a lot of things I've not done before on my own and felt confident about it.

I'm just thankful I have a job at all but after weeks like this one I am full of wondering what else I could do. Someday I hope I can figure that out.

Really Food Network...don't you need someone to plan events for you???

I have pesto sauce in my fridge that I need to use soon but it seems I was incapable of actually going out to purchase the tortellini I wanted to cook to go with it. Maybe tomorrow I'll finally make it. Besides - I'm a little pasta'd out.

I ended up having this at around 5 o'clock.



Around 7-7:30 I made myself an easy, steamy dinner. Steamed dumplings, shrimp and broccoli w/teriyaki sauce + a little crushed red pepper for spice.



and then took another piece of that poor bunny's face...



I took 2 Simply Sleep and crashed at about 8:30-8:45 and slept till nearly 7. It was just what I needed.

I'm planning to head to Zumba this morning and made myself a little egg sandwich to start the day. 1 egg, 1 slice of bacon, 1 oz of cheddar, 1 whole wheat EM.



After Zumba I'll come home and veg for a bit and then head uptown for some Halloween festivities. I am not really into this holiday and my costume is pretty simple but it should be fun. This time of year I miss my old suburban apartment though - virtually no kids live in my building. I'll pick up some candy on the way home just in case.

Candy I won't be too tempted to eat!

It'll also be fun to be out and watch the World Series tonight. I haven't watched a game in public in quite some time.

Of course it'll be even more fun if we win. :)

You've seen this before

I am crashing people. I am not built for being up and functioning at 5:30 am.

First things first...

So last night while watching some guys in pinstripes finally remember how to hit and win a game I wanted something sweet. I went to the fridge and found this:

That right there is a chocolate peanut butter filled rabbit my mom bought me for EASTER.

I have always been like this. Even as a kid I had Halloween candy until almost Easter. I've always had some sort of weird kind of willpower where candy is concerned.

Ice cream? French Fries? Not so much.

I ate his ears. :)



My day started today at 5 AM with a webcast. Craziness. I'm finishing up details for my meetings next week so hopefully I can get rid of some of this stress. I need a day at the spa like no one's business.

Breakfast today was leftover frittata with an EM w/butter on the side.



I may or may not go to the gym today. I was thinking I might head off to Zumba tomorrow instead. I think it'll all depend if I decide to go out tonight or not. Part of me wants to. Part of me knows I'm going out tomorrow night and also - worked at 5 AM. :)

So we'll see.

Sigh

So much for getting back to it. This week has been absolutely crazy at work. I start at 5 AM tomorrow.

Yeah you read that right. At least I get to work from home but ugh. It's not going to be pretty.

But overall I think there's a light at the end of the tunnel now.

Breakfast was the same old same old today. A whole wheat EM w/PB. No picture. You know the deal.

Lunch was the other half of my sandwich from yesterday, turkey, brie, honey mustard on ciabatta bread. So, so good. There is a really great sandwich place on my way to work.



I was in the studio all day. I'm getting the hang of this virtual thing I think. After work I went to Zumba. We learned the Thriller dance!!! So much fun. I know I have said this before - it is a fabulous workout if you get the right instructor. Someone new to the class was talking to Ben after and I overheard her say "I kept seeing all these people leaving the room looking like they were about to die and was like 'what is he doing to them in there?'"

She has her answer now I think!!

Dinner was the last of the Drunken Pasta...this time with peas!!!



As I said I'm home tomorrow. There's talk of going to see a band in Brooklyn but I have to see if I'm up to it. So tired right now.

Do over

I'm here to ask for a do over. I solemnly swear to get back to being a good blogger, to posting throughout the day, to giving you recipes and restaurant 'reviews' instead of just pictures.

I'd also like CC Sabathia to snap the hell out of it.

Sorry. I'm a mess lately. I'm mixing stuff up here again.

Anyway...as I've mentioned things are wacky and work is c-razy these days. I want to blog but I can't at work and I get home and I'm simply exhausted.

So. Let me tell you about how I made that pasta. Then I'll tell you about what I've eaten for the past few days. By the time I'm finished we'll be all up to date and I can start fresh tomorrow morning.

OK then.

Recently I've been having a craving for something a la Vodka and I've wanted to try PW's Penne a la Besty forever. She took much prettier pics and has the printable recipe. I usually make Rachael Ray's You Won't Be Single For Long Vodka Cream Pasta.

I've made this recipe like 5 or 6 times.

I'm still single.

I want my money back.

I wanted something new and yay for shrimp so I tried PW's version. Basically I followed her recipe but then realized....

THERE'S NO VODKA IN IT.

So my take had vodka AND white wine (just added the vodka too when she says to add wine), much less heavy cream and a pinch of crushed red pepper as well.

I pared it down for just me and made too much even then.

It was heavenly. I highly recommend.

Other news:

I weighed in today and I lost a pound. I am now in a new decade. I'm 9 lbs away from my goal.

NINE POUNDS.

I bought a size 8 pair of pants. They are stretchy but they have a button and a zipper and they are a size 8.

SIZE EIGHT.

It's been a year. I'm almost at goal but I'm so much smaller it's really mindboggling. I tried on a dress yesterday I wore to an event in February. I thought I looked great then. It is hanging off of me now.

CRAZINESS.

Now. Onto the food. If there's anything besides a boring peanut butter sandwich I'll give you breakfast pics.

Monday's dinner was this:



Leftover Drunken Pasta

I did 40 min at the gym incline walking and running for 10 min.

Yesterday I was a delinquent who took almost zero pictures. It was a rough, rough day. I went to rehearsal - walked about 8.2 miles over the course of the day. I had this for lunch:



Roasted chicken breast, brie, spinach, red bell pepper, honey mustard on a rye sandwich thin

Dinner was meat loaf on a rye sandwich thin. I ate it stealthly during warm up so - no pictures.

Today I had this for breakfast. I was at home for the morning, woke up at 7 and made a frittata.











Broccoli, Cheddar, 1 slice of bacon, 1 whole egg and about 1/8 cup of egg whites, salt and pepper. Baked in a lightly greased casserole dish for 35 min. Served over spinach.

I ran for 20 min, walked 10 at the gym, ending up at about 2.5 miles.

I have half my lunch leftover so I'll show you that tomorrow.

Dinner was a half a TJ's Pesto Flatbread with a little extra roasted tomato, fresh mozzarella topping.





So there we are. All caught up (kinda! I owe you tales of La Fonda del Sol). I promise I'll make a better effort going forward.

Also, no marathon for me - but it looks like I'm doing another 5K in a few weeks. Stay tuned.

I'll be back tomorrow. It's another busy day and I'll go to Zumba at night. I missed it last week.

Mmmmm Meatloaf (& other stuff)



After a week of suck three good things happened yesterday. I caught up on some TV and went shopping with my mom, the Yankess won the AL Pennant and my dad made meatloaf.

I'm not sure what order to put them in but there you go.



My family is mostly Irish. Our meatloaf has no tomato sauce or anything - just a mix of ground beef and pork, breadcrumbs and onion-y goodness and a few spices, sliced thinly.

Here you have some carrots and green beans, a half a biscuit, creamed corn, mashed potatoes and meatloaf. I had one more slice and one more spoonful of potatoes before all was said and done.

Then for lunch today - a meatloaf sandwich.



with a side of baked BBQ chips.

The world is on my last nerve today so after my 4 PM conference call I'm going to walk home and then run some on the treadmill.

But first - I havet to throw out those rotten bananas that are sitting on top of my fridge since Wed last week.

Yikes.

Back...kinda

Hi there. I'm sort of back. I have lots of pictures but not much substance behind them. For the last 5 days I was out on LI for not the happiest of reasons. My uncle passed away after an illness. Needless to say it hasn't been exactly fun. It's always so hard to lose someone too soon.

Anyway...that's where I've been.

So here's a recap of what I've eaten...pictures taken mostly by my crappy cell phone camera. I'll do a full report of La Fonda del Sol and my pasta and shrimp in pink sauce that I made before I came out here (seriously delicious) later in the week. Until then - here you go.


Thursday: Breakfast: bagel and light onion and chive cream cheese, Lunch: Turkey and Swiss on Whole Wheat, Dinner: Paninis (mozzarella and tomato, turkey swiss and honey mustard, chicken and roasted red peppers, salad










Friday: Breakfast: unpictured - 1/2 bagel with butter, lunch, onion roll + butter, Penne a la Vodka with chicken, (also unpictured - wine, half a slice of chocolate cake and strawberries)







Saturday: I was Snackie Magee ALL DAY but I ran 2 miles w/my sister. Stuff today is mostly unpictured - Breakfast: 1/2 bagel with butter, Lunch: leftover Penne a la Vodka, the end of a bag of Jalepeno potato chips, a handful of pumpernickel pretzels and hummus, a couple of tortilla chips, Dinner: Pasta w/Turkey Meatballs, one piece of garlic bread, Dessert: 2 Reese's Peanut Butter Cups






Sunday: Ran 1.8 miles, Breakfast: (unpictured - 1/2 bagel w/PB). Lunch - tuna on a whole wheat light EM Dinner: tba (but trust me - homemade and delicious)



So there you have it. That's what I've eaten since you've "seen" me last. Hopefully happier (and healthier) days are ahead.

Monday, Monday

Things are crazy around here. I had such a hard time getting up this morning. But after a quick train ride I was back in NYC.

I ate a sandwich thin w/PB for breakfast and this for lunch...

Plus some baked sour cream and cheddar chips.

Dinner tonight is another industry thingy at La Fonda del Sol. This means day 2 without working out - but I'll get back on track tomorrow with either my 7 mile walk alone or + a quick trip to the gym.

We shall see.

Lasagna

Still out on LI. It's cold and rainy and the perfect day for something warm and comforting.

I decided to make 2 trays of lasagna.

But first I ate this:



Ham and Swiss + mustard on an onion roll

And then had a snack of this:



pretzels and hummus. I had this multiple times throughout the afternoon

Ingredients for lasagna - now keep in mind - this is not something you can make for a single serving. I'm not even going to portion this out - because I really can't tell you my exact measurements. This is close though...

2 tbsp olive oil
3.5 lbs chopped meat
4 cans of tomatoes
3 lbs ricotta
2.5 packages of shredded mozzarella
1 cup parmesan
1/4 cup wine
1/2 a large onion
4 cloves garlic
2 packages of no-cook lasagna noodles
4 eggs
spices: oregano, bay leaves, crushed red pepper, garlic powder, basil, salt and pepper + fresh basil and parsley.










Sautee onion and garlic in olive oil



brown chopped meat....



Gross disgusting oily gunk leftover after browning. I know - so appetizing!



All drained



Add in the tomatoes



Then a little cheese and spices.




Mix the ricotta with parmesan, 4 eggs, fresh parsley, pepper and a ladleful of sauce

With salad on the side. I love this set of bowls. My mom and I bought them in Portugal.


And a new delicious 60 calorie dessert - Jell-O Mousse Temptations. I like this even better than the dark chocolate pudding.
