It was a concoction of leftover roasted tomato bruschetta, whole wheat spaghetti and ricotta.
Today I slept in a little and had breakfast at home. I tried a recipe that I saw in this months Health magazine by Ellie Krieger. Cheddar and Apple Quesadilla.
You might notice I don't eat a lot of fruit. It's not that I don't like it - I don't love it or crave it enough to keep it around without going bad. I much prefer veggies to fruit. Vegetables are so much easier to keep frozen.

I sliced half a Granny Smith apple (ate the other half) and about an ounce of extra sharp cheddar. Folded it in a tortilla and warmed it on the stove in a pan sprayed with canola cooking spray till it stuck together.

It was sort of similar to the Grilled Apple and Brie thingy I had at The Stanton Social for my b-day - minus the bacon.
Don't think I didn't think about adding it.
It was really quite delicious. I'll definitely make it again.
Now if someone could keep me from eating every last cookie that I left at my desk yesterday.
Hmmm. Apparently there was a fire alarm a floor above me that has now been cleared. Should I be worried that I never heard the alarm in the first place?
I'm taking a very needed night off. I'll probably go to the gym for a quick little workout just to keep in the habit but then it's me and The Biggest Loser and a yummy dinner.
I can't tell you how much I'm looking forward to it.
