I used the pieces of steak from Saturday night for lunch today. I made a vinaigrette of balsamic, olive oil, shallots and garlic over spinach, red bell pepper, scallions and cubed mozzarella.
Dinner will also be leftover - and at my desk. I'm going to eat before I leave here tonight.
Back to work. UGH. Coming back after a holiday is TORTURE.
